Maker CommentsTiền Giang is a province in southern Vietnam's Mekong Delta, a low-lying, tropical region with a vast network of rivers, rice paddies, and swamplands. 149 smallhold cacao farms, often less than an acre in size are organized as fermentary groups, wet beans transported to one central place. Under threat of drought and increased salinity this area's future in cacao is hopeful but uncertain. These beans come to us from our friends at Marou Faiseurs de Chocolat in Saigon who work directly with the farmers by providing feedback and assistance. The cacao is special to us, not only for its beautiful exotic flavours, but also as a fond reminder of a visit to Marou where our friendship was sealed by a tropical rainstorm. Tasting notes: cinnamon, wild ginger, cherry jam, Brazil nut.
