On the Pacific coast of Colombia along a river delta lies the remote region of Tumaco, an area inhabited by escaped slaves forming Colombia's largest Afro-Colombian community. The river shores are lined with mangrove and dense tropical forest. The region has a native cacao variety located far upstream and harvested in the wild.
Having deep chocolate flavors and mild bitterness, this dark milk chocolate has delicate citrus fruit, honey and floral flavors.
We're excited to share this bar as it shook our perception of what chocolate could taste like. The bean's natural jamminess combines with the smoky flavor from Papua New Guinea's technique of fire-drying to give it a bold, Southeastern-style barbecue tang. Its fruity notes give way to an earthy, leathery finish.
