The name "Chuao" is spoken with reverence. It symbolizes the world's most coveted cocoa and its source. For centuries, the farmers of Chuao have faithfully grown this native Venezuelan criollo cocoa. They ritually harvest and ferment the beans, then sun-dry them in front of their historic church. Once they reach us, we gently hand roast and stone grind them, turning this exalted cocoa into one of the world's finest chocolates. It is pure passion, pure tradition, pure love - pure Chuao. Tasting notes: plums, blueberries, blackberries, molasses, coffee, almonds.

From the first time I tasted these cocoa beans that we used to make this chocolate, I fell in love with them. Their rich flavor was intoxicating and beautiful. The cocoa comes from a small remote community in the Guayas River Basin just up river of Guayaquil, Ecuador. It was an easy decision to make chocolate from these wonderful beans.

After the chocolate was finished, we held a launch party with the farmers in Ecuador. We had free food for all and most important, they were all very excited to tasted the chocolate they helped to create. I will never forget the aged matriarch of the community thrusting out her hand and demanding "more" time and time again. Every time I taste this chocolate I am sure that she was right. This is one chocolate whose incredible flavor will cause you to always ask for "More."

On the southwest coast of the Indonesian island of Bali lies the regency of Jambrana. Known for its lush vegetation, fertile volcanic soil, and high humidity, it has ideal growing conditions for cacao. I have carefully selected fine-grade cocoa beans from around Jembrana to create this chocolate. Their deep chocolate flavor is accented with gentle nuttiness -- indigenous flavors of these prized beans. These beans create a singular chocolate that is rich, flavorful and, I believe, beautiful...

It is for good reason this is the very first chocolate we released. It tastes incredible and has won numerous awards in the United States, Europe, and Asia. The cocoa we use to make the chocolate comes from a cocoa plantation in the Sambirano Valley on the northwest coast of Madagascar. The owner of the plantation is a valued friend and colleague, so we are always sure to get his very best. Each batch of our Madagascar chocolate is carefully roasted, stone ground, refined, and conched to bring out the very best flavors of the exotic cocoa beans we use. It is a laborious process, but each bit of extra effort pays off when using truly special cocoa to create a chocolate such as this. The final result explodes in a symphony of flavors. Try this chocolate and you'll be sure you have found a favorite. This chocolate has a gentle chocolate flavor with notes of raspberries, cherry, raisin & citrus.

Accessible only on horseback in the mountains of northern Venezuela are several family-owned cocoa plantations. Here I discovered a limited supply of truly exquisite cocoa beans. We are the first to make a single-origin chocolate from these precious beans. Our vintage process gently accentuates their finest flavors. The result is a remarkable chocolate with flavor notes of apricot and marshmallow that you will find enchanting.

The cocoa from the remote Venezuelan village of Ocumare de La Coasta has become famous since the 1600's. Since we founded Amano, it has been an honor to be able to make chocolate from this rarefied cocoa. The flavor has always been one of the world's finest, and we have watched many people swoon as the waves of Ocumare's incredible chocolatey flavor gently overwhelm their senses. I have found the farmers of the Ocumare and neighboring valleys to be very kind and hospitable. For this reason, it is one of my favorite places to visit. I truly believe that this chocolate accurately reflects the pride, sensitivity, and personality of the humble farmers who grow the cocoa that we use to make this chocolate. As you taste it,, I am sure you will come to love as much as I do, not only the chocolate but the farmers and the land from which it comes. This chocolate has a rich, complex chocolate flavor with notes of red fruit and spice.

Combined here are cacaos of 9 plantations which, over the years, have been discovered, restored and rendered productive again by Alessio Tessieri: an exceptional raw material. From this, Cecilia created a powerful and balanced dark chocolate, in which the aromas of the plantations persist in the unmistakable flavour of this chocolate.

The name Chuao brings to the mind the legend of Mayan cocoa, a primitive taste, an earthly paradise where the "food of the gods" grows. It wasn't easy for Amedei to purchase and process these beans, and proved even more challenging for Cecilia Tessieri to "tame" the wild bean, which had never been tasted in the pure form. She discovered that after a 20-day aging period, this chocolate - unlike any other - continues to develop and improves its acidity and aroma.

We discovered this rare cacao growing along the remote slopes of Colombia's Sierra Nevada coastal mountain range at high altitude. On a day-long journey, cacao is collected in jute sacks on the backs of mules. The chocolate has a distinct auburn color, bright fruity flavors of apricot, caramel and a delicate nuttiness.

On the coast of Venezuela nestled high in the mountains lies a small village founded by runaway slaves. The name of their village, Patanemo, is derived from "paz tenemos" which means "we have peace." Venezuela is known for the best cacao in the world, having many cacao varieties with high Criollo content. Patanemo stands out for its complex comforting flavors of apricot, floral jasmine, cashew, coffee and caramel that evolve as it melts in your mouth leaving a long-lasting chocolate finish. This is a chocolate to savor sparingly.

This chocolate is made from Criollo cacao cultivated in the northwestern Pacific coastal region of Tumbes, Peru. Criollo is an ancient bean that represents only 1% of world cacao production. The chocolate has an initial fruitiness of red berries that changes to a raisin finish.

In the 1600's most of Puerto Rico was planted in cacao by the Spanish. It was an important export to Europe until a hurricane forced its abandonment. On their farm, our partners Juan and Maria have original trees. In the aftermath of Hurricane Maria 2017, they are still restoring their farm. It turns out that the old trees are more resilient and produced the majority of their harvest. Juan and Maria are dedicated to developing the fine cocoa industry in Puerto Rico with our cooperation. The cacao has a natural sweetness which brings delicate floral, vanilla, and soft tropical fruit flavors to our chocolate.

At high altitudes this rare cacao grows along the remote slopes of Colombia's Sierra Nevada coastal mountains. Since there are no roads on the mountainous terrain, the wild cacao is harvested by the Arhuaco indigenous people and brought down the steep sloes on the backs of mules in jute sacks. The locals measure the journey not by distance but by how long it takes to smoke their "tobacco", a homemade cigar. The chocolate has a distinct auburn color with caramel, fruity and nutty flavors.

On the Pacific coast of Colombia along a river delta lies the remote region of Tumaco, an area inhabited by escaped slaves forming Colombia's largest Afro-Colombian community. The river shores are lined with mangrove and dense tropical forest. The region has a native cacao variety located far upstream and harvested in the wild.

Having deep chocolate flavors and mild bitterness, this dark milk chocolate has delicate citrus fruit, honey and floral flavors.

Made from Trinitarios, a variety of cocoa bean developed in Trinidad over 100 years ago, this chocolate variety has both light fruit and robust cocoa flavors. Hints of coffee sit in the aroma. Slight sweetness transitions to milk tangy and long cocoa flavors and then on to hints of cookie and coffee in the finish. Each vintage of Chocolatour is unique in its flavor profile. The overall flavor and the distinct flavor notes will continue to develop with time. Historically, the Grenada origin has developed the most flavor over time, so this might be one to age a while before eating.

We made this bar with a new harvest of beans from Bertil's farm in Madagascar. After Cam and Alice visited last fall, we brought in a full container of beans and are thrilled with the result. This time, we find notes of strawberry and citrus with an almond-caramel finish.

These beans from Cumboto, a small town in northern Venezuela, were farmed by the gregarious José Lugo and roasted with our lightest touch yet. Densely chocolately and buttery upfront, Lisa's first batch has hints of cinnamon and coffee that remind us of our café's Mission Mocha.

We roast, crack, sort, winnow, grind, conch, and temper small batches of beans. Then we mold and wrap each of our bars by hand. By sourcing high-quality cacao and carefully crafting small batches of chocolate, we strive to bring out the individual nuances of each bean. These beans are fermented and dried by the Flor de Mantuano co-op in northern Venezuela. Minda loves the cocoa and coffee flavors we find in these beans year after year. In this bar, we taste notes of classic dark chocolate, roasted almonds, and espresso.
