| Maker Comments | Criollo Santa Bárbara (CSB) is the result of a recent project to hybridize Porcelana & Ocumare cacao located at Estación Experimental Chama in the cacao growing area south of Lake Maracaibo in Venezuela. Our initial tests pointed to a cacao with a very high % of Porcelana characteristics. The finished chocolate reveals a round, delicate chocolate, low astringency with a lingering finish. Notes: cream, cashews, figs. Very limited edition. |
