| Maker Comments | We discovered this rare cacao growing along the remote slopes of Colombia's Sierra Nevada coastal mountain range at high altitude. The cacao is a mix of cultivated and wild-grown criollo and trinitario varieties. It is harvested by the Arhuaco indigenous people. On a day-long journey, cacao is collected in jute sacks on the backs of mules. The chocolate has a distinct auburn color, bright fruity flavors of apricot, caramel and a delicate nuttiness. |
