| Maker Comments | We've wanted to honor the cultural connection between Jamaica and Toronto for many years by trying to source a cacao from Jamaica. This year we finally received an interesting sample courtesy of a plantation in St. Thomas Parish called Bachelor's Hall Estate. The owner Mr. Desmond Jadusingh grows a nice crop of Trinitario beans that are carefully fermented and systematically dried. The result: a chocolate with strong notes of ripe raspberries and wildflower honey. |
