This Limited Edition Bean to Bar was created in the Spring of 2011 using some great organic beans from two different organic co-operatives in Peru. We got very little of these great beans and spent a lot of time hand sorting, roasting, cracking and processing these gems into a great chocolate. There are less than 500 of these bars. Enjoy!
The Beni. A wild and untamed region of the Amazon. Home to wild cacao trees whose genetics preceed [sic] plantations and modern cacao farming techniques. Volker Lehman is the man who went deep to locate and get these beans to market and we truly applaud his continued efforts to bring this rare and wild cacao to us. This chocolate is wild man. The Arhuaca people of the Sierra madre mountains of Columbia believe that we are all their little brothers. The spiritual connection they feel with their surroundings dictates their entire existence. Their forays into growing cacao by planting heirloom varietals native to their region is but one way they transfer their ancient knowledge into a form all can understand by just tasting the results. Ghana is one of Africa's most prolific cacao growing countries. UTZ Certified Sustainable Cacao that tastes like chocolate should taste is rare. Sought after by the world's most disciminating [sic] chocolate makers for its spicy and fudgy undertones. We tried hundreds of samples to locate these beans. Ah, Jamaica. Such incredible gifts this island nation has brought the world. From Reggae to Jerk to Ital Roots the their generous contributions to the planet been great. [sic] Way up in the mountains lies a small cacao plantation called Bachelor Hall. It is run by Desmond who inherited it and spent years re-vamping the trees, developing a high quality sorting and fermentation process. DLA: This is a Madagascar bar...it should be making me swoon. Instead, there is a disturbingly chalky overtone that is taking away any hints of its origin.
The last thing this world needed was another 70% bar made from "Bertil's Beans". But hey, who are we to argue? Bertil Akesson's plantation in the Sambirano region of Madagascar produces some of the finest organic beans in the world. We have been using them for years. Big red fruit notes with a mild tang of the fermentary hover around your palate as the chocolate decends [sic] on you like a screeching conspiracy of ring tailed lemurs. Nigeria. A West African nation with a troubled past. Princely email offers aside, the country has a rich history of growing Good Cacao. Recently we stumbled upon some beans from a family run coperative [sic] in Nigeria that blew our minds. Like a spiced chocolate fruit cake these cacao beans are unique. They tasted like chocolate right out of the bag! But we could only get 2 bags! We bought em all. We may never be able to do this again. These beans are from Piura. One of Peru's most beloved cacao growing regions. They are certified organic and fair trade. They are also rare. Around 50% of each crop are "White Beans", which are prized for their flavor. The intense fruitiness is what sets this chocolate apart from the others we make. Kokoa Kamili is the source of these wonderful beans. It is a farmer collective of over 3,000 farmers throughout Tanzania who have banded together to improve their lives through the growing and harvesting of fine flavored cacao. They got their organic certification, they built new fermentaries, they command a fair and equitable price. What's not to love? We have enjoyed adding this exquisite fruity bean to our line up. Venezuela is heralded as one of the finest cacao growing regions in the world. Cuyagua is home to some of those beans. A tropical region where sun and surf meet cacao. This bar is intense. This bar will fool ya! This really is a pure dark chocolate. We know it doesn't look that way but that is because this very special chocolate was made with rare White Beans from the remote valleys of Peru. The beans are certified organic/fair trade at their source and are so special that we had to promise not to reveal exactly how we got them; but we didn't promise not to make some of the best chocolate on the planet with them. The creamy texture and subtle fruit are only surpassed by the succulent chocolate finish. One taste of this bar is all it takes to make you think you are being fooled. This Limited Edition blend was created in the Spring of 2011 using some great organic beans from Venezuela and the Dominican Republic. We felt these two needed to meet in a pronounced way with very little sugar added so you can really taste these fine cacao beans together.
Madagascar is well known the world over for producing some of the finest cocoa beans. We got our hands on some excellent organic beans traded directly from the plantation at way above fair trade prices and put our spin on them. Two different roasts have been combined to provide a fantastic journey through the character of these beans. The intense fruit comes through singing the praises of the terroir only to be followed by a deep dark chocolate finish that satisfies like no other.

In our endless pursuit of the perfect chocolate we have partnered, once again, with the Rogue Creamery to create a one of a kind taste sensation. This bean-to-bar chocolate is made in very small batches using some really great cocoa beans from Bolivia in combination with the Rogue Creamery's Blue Heaven powdered blue cheese. This bar is so rich, so complex it is hard to describe in mere mortal terms. It is a dream come true.

You gotta try this bar! Its not what you are expecting; rich, creamy, slightly tart with full cocoa bean flavor and a long smooth buttermilk finish....
This surprised me with how bad it was. It starts dry, for milk
chocolate. Then leads into a bitter taste. Ending with a
gritty sensation, much like chocolate that has been allowed to
sit in the cupboard for far too long.
All that for almost ten dollars. I was truly shocked.
What makes her delightful? Buttermilk! People are passionate about milk chocolate so we locked ourselves in the Utility Chocolate Research Kitchen and came up with a true American Original. Using extremely fruity cacao beans from Peru we combine sugar, vanilla and just a hint of cultured buttermilk to create this incredibly smooth and delightfully rich milk chocolate.

Welcome to "The Wild Thing". A completeley [sic] wild cacao harvested in the jungles of Bolivia. This pure "Criollo" is one of the most prized chocolates in the world.
