This chocolate bar is a blend of cacaos from Southern Mexico that complement each other well to create an approachable, classic dark chocolate flavor profile that comes to mind for a majority of people. Barra de la casa, our house blend, is lower in acidity with a nutty, fudgy profile. We think of it as the chocolate version of our Love Supreme coffee blend!

This bar is made with forever classic, freshly ground Unicorn Blood mixed with the new kid on the block, our Sleep Walk chocolate blend! Dark fruit notes from the chocolate and peanut butter notes from Unicorn Blood come through nice and strong giving the bar a swirl of flavors reminiscent of your childhood PB&J.
Notes: Caramel, Grape Jelly, Reese's.
We source this cacao from a community of 20-35 small farmers surrounding Tuzantán, Chiapas. The community is located near a ford or "Vado" in Spanish, giving this group of producers their name. In this region, producers also grow beans, papaya, pumpkins, and some even grow coffee, to have a variety of seasonal crops to harvest through the year. And don't forget the Drinking Chocolate.

Experiencing this chocolate tells a piece of the story of this massive beautiful beer.
We've worked with our friends at Half Acre Beer Company for many years -collaborating on this barrel-aged imperial stout and producing a variant with our coffee in it! DMC picked up freshly emptied barrels from Half Acre and filled one with cacao from Tabasco, aging these beans for months and allowing them to take on the character left in the wood from Benthic and the bourbon aged prior to that. While this bar is our classic ratio of 70% dark chocolate, the barrel imparts a surprising sweetness to the chocolate.
Tastes like anise, piloncillo, and plum.
Trinitario is originally from Trinidad & Tobago, giving the cacao its name, and is a cross between criollo and Forastero varieties. The trees get the more robust structure and high yields from their Forastero parent, while having a more complex flavor profile coming from the criollo genetics.
Tastes like orange peel, red fruit and almond butter.
