Ingredients: 4 ears sweet corn, freshly cut off the cob; 2 cans black beans, drained and rinsed; 1 red onion, diced; 1 bell pepper (green), diced; 1 bell pepper (red), diced; 3 limes, juiced; 1/4 cup cilantro (fresh), chopped; 1-2 jalapeno peppers, minced (or Poblanos); 1 Tablespoon fresh tarragon, minced; salt and fresh pepper
