Easy Chili Relleno Casserole
Grandma Jan developed this recipe in 2004. It makes a great side dish or breakfast "quiche"Ingredients:
- 1 large can whole, green chiles
- 3/4 cup mozzarella cheese, shredded
- 3/4 cup cheddar cheese, shredded
- 3 eggs
- 1/4 teaspoon salt- more to tase
- 1/4 teaspoon ground pepper, more or less to taste
- 1/3 cup heavy cream
- 2 tablespoon flour (all purpose)
You can use any combination of your favorite cheese. Jack, pepper jack etc.Directions:

Preheat oven to 350° and butter or grease a 9x9 casserole dish.

Using a sharp knife carefully slice along one side of each whole green chiles and open to lay flat.

In prepared casserole dish layer (in order) chiles, mozzarella, cheddar cheese. Repeat.

Whisk eggs, while continuing to whisk add cream, salt, pepper and flour. Whisk until smooth then pour egg mixture over layers.

Bake in oven 35-40 minutes or until knife inserted in center comes out clean.

Place on wire rack for 10 minutes to set then serve.
