If you want the dairy version- substitute the evaporated coconut cream by mixing 2 Tbl powdered sugar into 2/3 cup heavy cream during step 3.
Ingredients:
2 cups plums pitted and sliced
1 tablespoon water (if needed)
1 .25 ounce unflavored gelatin packet
1/2 cup hot water
1/2 cup granulated sugar
2 tablespoon lemon juice
1/2 cup evaporated coconut cream
Directions:
Place plums into a saucepan over medium low heat. cover and simmer, stirring occasionally, until soft- 5-10 minutes, adding 1 tablespoon water if the mixture becomes too thick or starts to burn. Remove from heat and allow to cool 15-30 minutes.
Using a bowl, dissolve gelatin in 1/2 cup hot water. Stir in plums, sugar and lemon juice, mixing until sugar dissolves. Transfer to the refrigerator and chill until the mixture begins to thicken, about 30 minutes.
Using an electric mixer whip evaporated coconut cream until thick. Gently spoon whipped milk into the plum mixture. Beat again with the electric mixer until fluffy and well combined.
If desired spoon into individual dessert dishes making sure a little piece of the peel is on top and add slivers of lemon rind to garnish.
Chill for at least 3 hours before serving.
I prefer to use sweet plumbs, the peel gives them a tart kick.
