Kick it up a notch by adding a couple sliced plums, apricots, or 1/2 cup of berries.
Ingredients:
4 pounds medium peaches, peeled and sliced 1/2" thick
1 teaspoon vanilla extract
2/3 cup granulated sugar
1 tablespoon cornstarch
2 tablespoon all purpose flour
1 cup all purpose flour
2 cups old-fashioned oats
3/4 cup dark brown sugar
1 1/2 tablespoon cinnamon
1 teaspoon kosher salt
1 cup butter cut into 1/2" cubes
1/2 cup pecans (chopped) optional
Preheat oven to 350°F and grease a glass 9 x 13" baking dish with butter.
Directions:
Step 1: Place peach slices in a large mixing bowl and toss to coat in the vanilla extract. In a separate bowl, whick together sugar, cornstarch and 2 tablespoons all-purpose flour. Dump sugar mixture over peaches and toss until they are evenly coated. Set aside for 30 minutes.
Step 2: In the bowl of a stand mixer, combine remaining 1 cup flour, oats, brown sugar, cinnamon and salt. Mixt to combine. Turn the mixer to low and add one cube of butter at a time, waiting until it is incorporated before adding the next. Continue until all of the butter is used. Add pecans and mix until evenly incorporated.
Spread peach mixture evenly in prepared baking dish. Sprinkle oat mixture on top of the fruit, making an even layer.
Bake until peach liquid is bubbling and the surface has browned, about 1 hour. Allow to cool slightly before serving with vanilla ice cream if desired.
