Apple Skillet Cake
Serves 8
Ingredients:
- 3/4 cup all purpose flour
- 3 eggs
- 1 cup milk
- 1 teaspoon salt
- 2 tablespoon butter
- 3 apples
- 1/8-1/4 cup orange juice
- 1/4 cup dried cranberries
- 1/4 cup brown sugar
- 1 teaspoon cinnamon (or more to taste I like 3 tsp).
- 1/4 cup sliced almonds (toast if desired)
- 1 cup yogurt
You can substitute the apples with pears, add a dash of cardamom with the cinnamon. I would leave out the cranberries.
Directions:

Preheat oven to 425° F

Core and thinly slice apples then toss with orange juice. Pour off excess juice.

In a small bowl whisk eggs, milk, flour and salt. Set aside.

In an oven proof skillet melt butter over medium heat. Cook apple slices and cranberries until soft 6-8 minutes.

Add brown sugar and cinnamon, cook additional 2-3 minutes or until caramelized.

Pour batter over apples and transfer skillet to oven and sprinkle with sliced almonds.

Bake 12 minutes, until cake puffs up.

Let cool slightly. If desired serve with dollop of yogurt.
