Every year Stacy would request this for Christmas breakfast
Ingredients:
Popover Puff
3 tablespoon butter, melted and divided
1 cup milk
6 eggs
1 cup flour
1/2 teaspoon salt
Apple Cranberry Filling
1 Orange, zested and juiced
1/2 cup dried cranberries
1 3 0z package vanilla pudding mix (cook and serve)
1 teaspoon cinnamon
4 firm apples, cored and sliced
1/4 cup sliced or slivered almonds, toasted
1 tablespoon powdered sugar
Preheat oven to 450° F
Directions:
Spread 1 Tbls butter in 12" stoneware baking dish.
In small bowl sift flour and salt together. Set aside.
In large mixing bowl whisk together milk, eggs and remaining melted butter.
Add flour to egg mixture; whisk 1 minute or until smooth.
Pour batter into baking baking dish.
Bake 20 minutes.
Reduce temperature to 350° and continue baking 10-15 minutes or until puffed and golden brown.
Meanwhile, prepare apple cranberry filling.
Add enough water to juice to measure 1 cup.
In large microwavable bowl combine orange zest, orange juice, cranberries, pudding mix and cinnamon. Mix Well.
Add sliced apples to pudding mixture. Stir to coat. Microwave on high 4 minutes. Stir gently. Microwave another 4-5 minutes until glaze is thickened and clear. Remove from microwave and stir gently to evenly coat apples.
Place baked puff on cooling rack and let stand 3 minutes or until puff begins to fall, forming a shell. If necessary, use a knife to loosen puff from baking pan.
Spoon hot filling into center of puff. Sprinkle with toasted almonds. If desired sprinkle with powdered sugar.
