Sheri's Dairy Free Granola
Yields about 8 cups granola. Can be frozen in airtight container.Ingredients:
- 2 tablespoon coconut oil
- 1 1/2 cup oats
- 2 cups pecans (chopped)
- 1 cup almonds (sliced or slivered)
- 1/3 cup pumpkin seeds
- 1/3 cup sunflower seeds
- 3 tablespoon sesame seeds
- 1-2 tablespoon flax seeds
- 1 tablespoon poppy seeds
- 2 teaspoon chia seeds
- 1/2 teaspoon salt
- 2 tablespoon cinnamon
- 1/2 cup coconut oil (melted)
- 1/2 cup honey
- 1 teaspoon vanilla
- 1 cup coconut (shredded)
Preheat oven to 350°Directions:

Using 1-2 tablespoons coconut oil grease a large, rimmed baking sheet.

In extra large bowl, combine the oats, nuts, seeds, salt and cinnamon. Stir to blend.

Pour in the melted coconut oil, honey, and vanilla. Mix well until every oat is coated.

Pour the granola onto prepared pan and use a large spoon to spread it evenly .

Bake 12 minutes, remove from oven and stir in coconut flakes.

Return pan to oven and bake an additional 12 minutes.

Let the granola cool 20 minutes, stir and allow to finish cooling.

Store the granola in an airtight container at room temperature for up to 2 weeks or in the freezer for up to 3 months.
Serve with your choice of yogurt, milk, fresh fruit. It's great as a snack when mixed with dried fruit.Comments:
You can replace your favorite nuts or seeds for any combination that equals approximately 4 cups of nuts and/or seeds.
