Madeira Honey Cake
- 9 eggs
- 1/2 cup sugar
- 2 Tablespoons molasses
- 1.5 cups honey
- 1.5 Tablespoons olive oil
- 1 teaspoon butter
- 1 Tablespoon cinnamon
- 1 lemon rind
- 2 cups flour
- 1 teaspoon baking powder
- 1 cup almonds, chopped
- 1 cup walnuts, ground
Preheat the oven to 350 degrees Fahrenheit.
Beat the yolks in a blender with the honey, olive oil,
cinnamon powder, molasses, and lemon rinds until it is a
smooth and even consistency. Pour it into a large bowl.
Beat the egg whites together with the sugar in the
blender until they are creamy and smooth.
Pour this mixture into the large bowl and mix it together.
Add in the flour, baking powder, chopped almonds,
ground walnuts and mix it together well until it is smooth
Pour the mixture into a greased baking mold and place
it in the oven.
Let it cook for 15-18 minutes until the top has browned.
Take it out of the oven once done, remove from the mold,
and let it cool for 15 minutes. Serve.
