Makes 2 servings Goes great with Almond-Crusted Chicken & romesco

Ingredients:

I like to double the veggies & raisins

Directions:

  1. Heat 1 cup water, farro and salt in a saucepan over medium until water boils; reduce heat and simmer until farro is tender and water nearly evaporates, about 25 minutes.
  2. Sauté onion, Chard ribs and garlic in oil in a sauté pan until tender.
  3. Stir in chard leaves, 1 Tbls water and raisins, cooking just until leaves begin to soften.
  4. Stir chard mixture into cooked farro.
