Asparagus with Pea & Prosciutto
This dish is really popular at pot-luck dinners or as a side dish at home.Ingredients:
- 1 pound asparagus, trim woody ends
- 1 thin slice prosciutto
- 1 cup frozen green peas
- 1/3 cup low sodium chicken stock
- 1 teaspoon butter
- 1 1/2 tablespoon fresh mint, chopped
Directions:

Preheat oven to 425°F.

Place asparagus in a single layer on a baking sheet with 1 very thin prosciutto slice. Roast for 8-9 minutes.

Microwave frozen green peas, chicken stock and butter at high for 2 minutes.

Pulse pea mixture and chopped mint in a mini processor.

Spoon pea mixture over asparagus. Crumble prosciutto over the top.

Serve warm or cold.
