Asparagus with Pea & Prosciutto

This dish is really popular at pot-luck dinners or as a side dish at home.

Ingredients:

Directions:

  1. Preheat oven to 425°F.
  2. Place asparagus in a single layer on a baking sheet with 1 very thin prosciutto slice. Roast for 8-9 minutes.
  3. Microwave frozen green peas, chicken stock and butter at high for 2 minutes.
  4. Pulse pea mixture and chopped mint in a mini processor.
  5. Spoon pea mixture over asparagus. Crumble prosciutto over the top.
  6. Serve warm or cold.
