Roasted Chicken, Apples and Leeks
Serves 4Ingredients:
- 8 small bone-in chicken thighs & drumsticks
- 4 small crisp apples quartered
- 2 leeks, halved crosswise and lengthwise
- 6 small sprigs fresh rosemary
- 2 tablespoon oli
- 1 teaspoon salt
- 3/4 teaspoon ground pepper
Preheat oven to 400°FDirections:

In a large roasting pan or rimmed baking sheet, toss the chicken, apples, leeks, rosemary, oil, salt and pepper. Turn the chicken skin-side up.

Place in oven and roast until the chicken is cooked through (170-175°) and the apples and leeks are tender, 40-45 minutes.
