Cherry Plum Muffins
Makes 12 servingsIngredients:
- 1 cup all purpose flour
- 1/4 cup almond flour
- 1/4 cup granulated sugar
- 2 tablespoon brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/2 teaspoon cardamom
- 1/4 teaspoon nutmeg
- 1/4 cup butter (melted)
- 1/4 cup whole milk yogr\urt
- 1 egg
- 1 cup cherry plums + 4 sliced cherry plums
- 2 tablespoons slivered or sliced almonds
Pre-heat oven to 350° and line a 12-cavity muffin tin with paper liners and set aside.Directions:

Core and remove the seed of cherry plums and chop into half inch pieces to make about 1 cup.

In a bowl sift together flour, almond flour, cardamom, ginger, nutmeg, salt,, baking powder and baking soda.

In a separate bowl beat egg with granulated sugar and brown sugar, then stir in yogurt and melted butter. Combine well.

Pour wet ingredients into the dry ingredients and stir well. Fold in chopped plum cherries. Reserving sliced cherry plums for next step.

Spoon mixture into prepared muffin tin and top with sliced cherry plums and almonds.

Bake in preheated oven for 20-25 minutes or until toothpick inserted in center comes out clean.

Allow to cool 5- 10 minutes and remove from pan.
Can be served warm or cold.
To freeze allow to cool completely, wrap individually with plastic wrap and store in Freezer bags.Comments:
