Together with Big Tree Farms we are committed to supporting the preservation of traditional farmers through the development of social, ecological and economically sustainable supply chains in Bali. The two farms producing our trinitario beans are the properties of the Sukrama family who cultivates 8000 cocoa trees over 7 ha in the Melaya area in the western part of the island. We introduce here the first Bali chocolate bar ever made in Europe. Very chocolaty, this bar has a masculine bitterness and expressive notes of spices.

In April 2009, Bertil Åkeson, Jr. and his Brazilian partner Dr. Angelo Calmon de Sá, purchased the historic Fazenda Sempre Firme in Bahia, Brazil. This 120 ha cocoa plantation is right in the middle of the Mata Atlantica, the wild forest with the highest biodiversity on earth. They were able to recreate a social structure and their best reward is to hear the community referring to the Fazenda as a "Paraíso" (paradise). They are growing there the traditional and astonishing forastero cocoa variety called "parasinho" that made the glory of Bahia at the beginning of the 20th century. The chocolate we developed from our beans is smooth, woody and earthy. It has also expressive notes that evoke autumn scents, tobacco and the local pitanga fruit.

Part of the 2300 ha Åkesson family estate, the plantation is located in the Sambirano Valley, in the North-West of Madagascar. Since 1920 we have produced world-famous aromatic cocoa. Besides 300 tons of trinitario cocoa produced every year, a very limited quantity of criollo beans - 2 tons - is harvested separately. This chocolate has a very expressive cocoa aroma with subtle fruity-sweet tartness and pleasant flavour notes that evoke citrus and red berries.

Bought Tallinn 2009, good taste for the price, it costs only like 50-60 cents here I think, less than 1€ anyway. Not too bitter as dark chocolate could be, nor too sweet like milk chocolate. Minus is that a bar could be bigger (then maybe more expensive of course) and it is not easy to find on store. Maybe because not the most popular brand, difficult to compete with Kalev and Fazer there. 8.8/10. :)

From the very first time I tasted the cocoa beans we used to make this chocolate, I fell in love with them. Their rich flavor was intoxicating and yet beautiful. The cocoa comes from a small, remote community in the Guayas River Basin just up the river from Guayaquil, Ecuador. It was an easy decision to make chocolate from these wonderful beans. After the chocolate was finished, we held a launch party with the farmers in Ecuador. We had free food for all and most importantly, they were all excited to taste chocolate they helped to create. I will never forget the aged matriarch of the community thrusting out her gnarled hand and demanding "more" time and time again. Every time I taste this chocolate, I am sure that she was right. This is one chocolate whose incredible flavor will cause you to always ask for "More." Tasting notes: This chocolate has a rich chocolate flavor with notes of green bananas, smoke and blackberries.

On the southwest coast of the Indonesian island of Bali lies the regency of Jambrana. Known for its lush vegetation, fertile volcanic soil, and high humidity, it has ideal growing conditions for cacao. I have carefully selected fine-grade cocoa beans from around Jembrana to create this chocolate. Since we founded Amano, it has been an honor to be able to make chocolate from this rarefied cocoa. The flavor has always been one of the world's finest, and we have watched many people swoon as the waves of Ocumare's incredible chocolatey flavor gently overwhelm their senses. I have found the farmers of the Ocumare and neighboring valleys to be very kind and hospitable. For this reason, it is one of my favorite places to visit. I truly believe that this chocolate accurately reflects the pride, sensitivity, and personality of the humble farmers who grow the cocoa that we use to make this chocolate. The name Chuao brings to the mind the legend of Mayan cocoa, a primitive taste, an earthly paradise where the "food of the gods" grows. It wasn't easy for Amedei to purchase and process these beans, and proved even more challenging for Cecilia Tessieri to "tame" the wild bean, which had never been tasted in the pure form. She discovered that after a 20-day aging period, this chocolate - unlike any other - continues to develop and improves its acidity and aroma.
