Jennifer Wicks began experimenting with the art of chocolate making in her home about 2008. Wicks has experimented a lot over the years, changing the percentages of the ingredients. Her own taste and that of her family and friends have led to a dark chocolate bar that is 72 percent cocoa. Her kitchen, located along a bend of Burnt Fork Creek, east of Stevensville, just passed government inspection in September 2011 and she is now producing dark and milk bars of single origin and blends.

DLA: This one tasted so much like coffee/tobacco to me, I nearly spat it out (I hate coffee/tobacco).

DLA: Like the Belize bar, this one has a strong coffee flavor (which I don't care for), but it is far less overpowering than the Belize, and I tolerated it better.

DLA: I'm not certain if Burnt Fork Bend is using the same equipment to grind coffee beans or what, but this bar also has strong overtones of coffee, which I don't care for. The chocolate is good. It would be orders of magnitude better without the coffee flavor.

Brought to you from Burnt Fork Creek where the delightful aroma of chocolate wafts from the kitchen in which this fine chocolate is handcrafted. The 60% dark chocolate is named after a former co-worker, a chocoholic who was not fond of the 72% dark and wasn't afraid to honestly tell me so. After several attempts, I finally developed a recipe he liked and so I named it after him.

Dexter cattle graze lazily near Burnt Fork Creek where the delightful aroma of chocolate wafts from the kitchen in which this fine chocolate is handcrafted. Dexter is a heritage breed of cattle considered to be dual purpose, used for both meat and milk. I consider this milk chocolate dual purpose in that it is milk chocolate yet still dark at 62%.
